I haven't posted in a while, so I thought I would share with you one of my favorite new recipes, Coffee Cake!! This recipe was hard for me to perfect, it took multiple batches before I figured out how to get the perfect soft consistency, most of the recipes I found online made a super dense, super hard cake! So, after many many tweaks this is what I got!! I used this recipe on Cake Wars Champs and we WON!! So, I am pretty much going to guarantee that you are going to LOVE this cake!! (or at least, not hate it! Hehe)
2 1/4 cups all purpose flour
1 1/2 cup granulated sugar
1/4 cup dark brown sugar
4 teaspoons baking powder
1 teaspoon salt
1 cup whole milk
6 large egg whites, room temperature
1 1/2 sticks unsalted butter, softened
2 tablespoons of hot water + 6 tablespoons of instant coffee
2 teaspoons vanilla extract
Preheat the oven to 350 degrees F.
In a small bow combine hot water with the instant coffee and stir until the coffee is dissolved, set aside.
In a separate bowl combine milk, egg whites, vanilla extract and add in the coffee mixture. Mix together lightly with a whisk or fork.
In an electric mixer, add the flour, sugar, baking powder, and salt. Turn the mixer on and blend at a slow speed until all dry ingrediants are evenly incorporated, then add butter. Continue mixing until the mixture becomes moist crumbs with no streaks remaining on the sides of the mixing bowl.
Add 3/4 of the milk mixture to the crumbs and beat at a medium speed for about 1 1/2 minutes. Add remaining 1/4 of the milk mixture and beat for 30 seconds. Pour the batter in your cake pans. (makes about three 8 inch cake rounds.
Bake until golden brown (about 20 minutes) remove cakes from the pans let cool to room temperature and ice with your favorite icing! Personally, I like to mix it with cream cheese icing!

I actually tweaked this recipe and made the "Salty Cream Cheese" filling on Cake Wars that got some serious raves from the judges!! So, anyway, here it is! Hope you love it!
24 ounces (3 - 8 ounce packages) cream cheese, room temperature
2 sticks unsalted butter, room temperature
2 1/2 cups powdered sugar
2 teaspoons vanilla extract
1/2 teaspoon salt (for salty cream cheese do 1 teaspoon of salt or fleur de sel)
Beat the cream cheese and butter together until they are beautifully incorporated and fluffy! Slowly add the powdered sugar, remember to scrape the bowl as you mix ;) Then, add the vanilla extract and fleur de sel until they are completely mixed in. Viola!!! Simple. Easy. DELISH.
